Smokey Roasted Pork Tenderloin

Hi friends! I wanted to pop in and drop this delicious pork tenderloin recipe on the blog. We love making this for a quick, week night dinner that is packed with protein and flavor. Pair it with a roasted veggie, and have dinner ready in 30 minutes! See details below:



INGREDIENTS:
-1 pork tenderloin (I typically get one around 1 pound for my husband and I, and there isn't normally any leftover)
- 1 TB smoked paprika
- 1 TB cumin
- 1 TB chili powder
- 1 TB pink Himalayan sea salt
- 1 TB garlic powder
- Juice of 1/2 lemon
- Olive oil

DIRECTIONS:
1. Preheat oven to 350 degree
2. Grease a glass pan with olive oil, and place pork in pan
3. Sprinkle all seasonings over the pork
4. Squeeze lemon over the pork
5. Bake for 25-30 minutes (for pork tenderloin around 1 lb, longer for larger pieces)
6. Let meat rest for 5 min
7. Slice into pieces and enjoy with remaining juices poured over the pork

TRAVEL SURVIVAL GUIDE



Hi friends! Dropping in with a different kind of post today- one that is centered around traveling (particularly, business travel). I'm working in Colorado until Thursday, and today I figured out that from June-September, I’ll have traveled a total of 67 days 😯 (it doesn't seem that its been that many, but my suitcase handle says otherwise). I wanted to share few tips on what to bring and what to download prior to traveling that are super simple (and small) but will make the travel grind a lot easier, more comfortable, and maximize your rewards points.


WHAT TO DOWNLOAD/DO BEFORE TRAVELING:


1.       DOWNLOAD AIRLINE APP
If you haven’t ever downloaded an airline app (or haven’t recently), they are a HUGE help and have come a long way in what they offer. In the most basic terms, they will allow you to check into your flight, add the boarding pass to your Apple Wallet, change your seat assignment if needed, and track the status of your flight. Once you log in once, the app will remember your frequent flyer number, have all of your reservations available, and allow you to do these basic tasks much faster than logging into the website (or checking in at the airport).

One of my favorite features of the airline app is the ability to track luggage. Have you ever had a layover and wondered if your checked bag even made it on the plane with you? Airline apps now automatically add the bag tracking number to your app as soon as they scan it, and it will tell you where your bag is at all times. Hallelujah for more information and less time spent worrying!

Another main reason to have the airline app downloaded is to have access to the free in-flight entertainment. Every airline is slightly different, but most now allow you to access movies, TV shows, and music free through the app if the plane doesn’t have a built in TV in front of each chair. It can be difficult to have enough service/speed to download the app while waiting for take off, so do this in advance so you are set up and ready to go if you find yourself on an old plane without entertainment. 

Most importantly, try to stick to one airline if you can for travel, and create the free frequent flyer number. You will earn miles for free flights and gain status by doing so (and can access this information through the app). Even if you don’t fly much, still do your best to stick to the same airline to build up those miles! Eventually, it'll be a free flight.


2.       DOWNLOAD HOTEL APP
Like the airline apps, hotel apps (I use Marriott) allow you to check into the hotel through your device. Log in once, and the app will remember your rewards number and pull up all upcoming reservations. It’ll also allow you to see your past stays and confirm you received points for past stays. This is a super easy way to double check this and reach out to the hotel if anything is missing. 

The Marriott app in particular also allows you to make additional requests on the app, such as getting extra towels, changing housekeeping preferences, or requesting other amenities and alerts the front desk. For instance, this week when I checked in, I forgot to tell them I’d like to opt out of housekeeping to earn extra points (500 extra per night). I was able to jump into the app and make this request in 10 seconds without having to go back down.


3.       GET CHASE SAPPHIRE RESERVE CREDIT CARD
If you are a frequent traveler (for personal travel), this is the best credit card I’ve found so far. The main benefits of this card are $300 free travel voucher each year, free TSA precheck/global entry (which is lifechanging and allows you to breeze through security + customs), access to all priority pass airport lounges worldwide (think free wifi, free food, free drinks, and a comfortable place to wait for your flight to take off), travel insurance, no foreign transaction fees, 3X points on travel and dining, 50% more value in travel rewards (meaning if you redeem your points for something travel related, you get 50% more points), and more. The annual fee for the card is $450, but when you factor in the free travel voucher and free TSA precheck, you net out for a $70 annual fee. If you take advantage of the points back, free food/drink/wifi at airport lounges, and free travel insurance, it is definitely worth the $70.   


4.       DOWNLOAD A FOOD/FITNESS APP
When traveling, it is very hard to stick to our normal eating habits and fitness routines. I also find that I spend a lot more time sitting, between long flights and driving to and from the airport. Downloading a fitness app, such as My Fitness Pal, allows you to track your calories and workouts and increase overall awareness of how much/what you are eating and drinking. Tracking steps on a Fitbit or even just the default Health app on the iPhone will also keep your own health at the top of mind and motivate you to stay moving. 


WHAT TO BRING: 

 
1.       PORTABLE PHONE CHARGER
In your personal item you bring on the plane, include a charged portable phone charger. Between using your phone to make phone calls in the airport, send work emails, as a boarding pass, for in-flight entertainment, for hotel check in, and for uber, it will probably need some extra juice. Many airplanes now have a place to charge your phone in your seat, but I like to have the backup charger just in case I end up on an old plane.
  
2.       REUSABLE WATER BOTTLE
Flying is extremely dehydrating to the body, so I try to drink as much water as possible while traveling. Buying water bottles at the airport can be expensive, so I bring my own and fill it up at a water bottle filling station, which are now at most airports. It also comes in handy to use in the hotel room instead of the tiny glass cups and while in the office.

3.       CARD PHONE CASE 
I’ve found that having a phone case on the back of my phone that can hold two to three cards makes for a much easier time getting through security and the airport. Rather than fumbling through your bag and wallet to find your ID to get through security or to buy a meal in the airport, your most frequently used cards while traveling are in the back of your phone. You most likely have your phone in an easy-to-reach place anyway, so tag on your cards to it for less to keep up with.


4.       GINGER TURMERIC TEA
I always bring a few bags of ginger turmeric tea for the plane. Turmeric boosts the immune system and is a natural anti-inflammatory, and ginger settles the stomach. The combination of these two ingredients is helpful for swelling that occurs when flying and any motion sickness or nausea. This blend of tea is also caffeine free, so it also helps with hydration.


5.       ESSENTIAL OILS
I’m a huge fan of essential oils, and typically bring 3 with me when traveling. The first is a lavender room spray, which is 35 drops of lavender in 3oz spray bottle plus water. It can be hard to sleep in hotel rooms, so this makes the hotel feel like my room at home where I have a diffuser without having to pack the whole thing. The second is the Doterra's Deep Blue oil, which is a natural muscle relaxer. After flying, it does wonders for my neck and shoulders. The third I bring is Doterra’s Melaluca (Tea Tree Oil), which has antibacterial and antiviral properties. I use this as a “first aid” oil for cuts, dry skin, blemishes, etc.

No-fail crockpot chicken marinade





Hi friends! I wanted to pop in with a quick post about my FAVORITE go-to chicken marinade for the crockpot. Three things I love about this marinade:

1. It takes about 5 minutes to make
2. It uses ingredients I typically have on hand
3. It has tons of flavor and clean ingredients




INGREDIENTS:
-2 lbs chicken
-1/2 cup balsamic vinegar
-1/2 cup extra virgin olive oil
-1/2 cup coconut aminos 
-1/3 cup spicy brown mustard (check for no sugar, Trader Joe’s has one available)
-1-2 tbs herbes de provence (from Trader Joe’s, contains thyme, majoram, savory, rosemary, basil, sage, and lavender)
-1 tbs garlic powder 
-1 tbs onion salt
-1 tbs everyday seasoning (Trader Joe's)

DIRECTIONS:

1. Whisk all ingredients together in a mixing bowl
2. Place chicken in crockpot
3. Pour marinade over chicken
4. Cook for 8 hours on low
5. Shred and enjoy over a salad!

WHOLE 30 INSPIRED MEAL PLANNING


Hi friends! At the beginning of April, my husband and I decided to do a little post-vacation detox and settled on trying Whole 30 (and when I say settled, I mean I begged him to try it with me because I knew I couldn't be successful alone). For those of you who haven't heard of Whole 30, it is a thirty day nutrition "reset" that is designed to reboot your metabolism, curb cravings, and eliminate foods that your body could be negatively reacting to (more on the program here). Spark notes version: no sugar (of any type, including honey), no grains (of any type, including quinoa), no dairy, no legumes, no corn, no soy, no alcohol, and no MSG/sulfites/carrageenan. We are currently on day 20, and I thought I'd drop in and share some insight from our experience so far!


Since the list felt pretty overwhelming at first, I started by thinking about what we had been eating for breakfast, lunch, dinner, and snacks pre-Whole 30. I realized that almost all the dinners we already made did not include any of those ingredients, which the exception of quinoa and sugar (sugar is in EVERYTHING- our biggest takeaway so far-- think: marinara sauce, asian marinades, ketchup, BBQ sauce, worchester sauce, etc.) I focused on finding "cleaner" marinade recipes that I could quickly make myself, and I found that was pretty do-able. Most of our dinners consisted of fish (shrimp, salmon, scallops, mahi-mahi and cod), ground beef, or chicken (more on how I stocked up on wild caught, organic versions of these on a budget later on!), a vegetable (asparagus, brussel sprouts, green beans, zucchini, butternut squash, mushrooms, or peppers), and often times roasted red potatoes with herbs (potatoes = a lifesaver when you eliminate carbs from your life). With our busy schedules, I also made sure everything we ate for dinner could be prepared in 30 minutes or less.

For breakfast, I had been eating oatmeal, which I needed to find a substitute for, and my husband had been eating nothing (face palm), and we found that we had most success with egg-based breakfasts  because we could make ahead of time for the entire week. We ate a breakfast casserole packed with veggies, sausage, and egg or had hard boiled eggs with fruit or a pumpkin apple breakfast bake.

For lunch, I am a part of a salad club at my work (we've had it for a year and a half and still going strong!), so I was able to eat all of the veggies, lettuce, and fruit that were provided, and I brought a backup protein in case the one provided had a marinade that wasn't Whole 30 approved. My husband had the most success with making a big salad that lasted him the whole week or doing a chicken and veggie stir fry with riced cauliflower instead of rice.

Though Whole 30 doesn't really recommend much snacking, both of us are hungry pretty much every two hours regardless of how big our meals are, so we had to implement snacks to prevent us from becoming hangry humans/completely failing. Our snacks consisted of nuts (cashews, almonds, pistachios, walnuts), fruit (berries, clementines, apples, bananas), celery and almond butter, and avocado. All of these don't require any preparation, which was key for us so we wouldn't be consumed with food prepping constantly.

The day before we started, we made a big Costco run to stock up on pretty much all of the meat, fish, and chicken we would be eating for the next 30 days. This significantly reduced the cost of eating all organic/wild caught protein and also meant we didn't have to make any other huge grocery trips during the course of the month. We froze pretty much all of the protein we bought, and thawed it the day before we planned to use it. We also stocked up here on nuts and dried fruit. Their almonds and pistachios are around $10-$12 for a giant bag (a small bag at the grocery stores near us charge a similar amount), and they had a Whole 30 approved dried fruit that came in clutch when we needed a sweet fix (organic figs, no sugar or other ingredients added). We also bought our eggs at Costco. Their 24 pack of organic brown eggs is $5.99, and we were going through eggs quickly and loved this larger pack. While we were there, I also went ahead and bought our fruits, veggies, and potatoes for the first week and a half- much which lasted even longer (clementines, avocado, green beans, broccoli, kale, canned diced tomatoes, canned tomato paste, peppers, small red potatoes, bone broth). That Costco trip was around $380, which was actually a pretty good price considering it covered almost all our meat for the month and lots of staples we'd use even after Whole 30 was over. The remaining weeks, we went to Trader Joe's and pretty much just had to stock up on fruits and veggies (and ingredients for marinades or other recipes that we didn't already keep on hand, such as coconut milk).




Below I have some of our favorite recipes. My focus is always to make simple, quick meals that don't sacrifice flavor. If you are doing/have done Whole 30, I'd love to hear what your favorite recipes have been!


STUFFED PEPPERS:

Servings: 4 (we eat them over the course of 2 nights)

Ingredients:
-4 large bell peppers (any color)
-1 lb ground beef
-1 onion, diced
-1 small can of green chilis
-half a jar of Trader Joe's Salsa Autentica- or any other approved W30 salsas
-chili powder to taste- Trader Joe's chili powder has no sugar added
-cumin to taste - Trader Joe's cumin has no sugar added
-garlic to taste - Trader Joe's garlic powder/salt has no sugar added
-sliced hass avocado

Directions:
1. Preheat oven/toaster oven to 350 degrees
2. Chop of the top of the peppers and remove seeds from interior. Set aside and place in oven when ready.
3. Chop onion and add to large sauté pan with garlic. Cook until translucent.
4. Add ground beef, chili powder, cumin, garlic and cook until brown
5. Add green chili and salsa, stir to combine
6. When peppers are soft, remove from oven and stuff with beef mixture.
7. Top with additional salsa and sliced avocado and enjoy!

*for the second day we are enjoying this meal, we just cut a new pepper, stuff it, and place in oven until softened/warm

EGG, TOMATO, SPINACH, BASIL, AND SAUSAGE BREAKFAST BAKE:

Servings: 9

Ingredients:
-12 eggs
-2 large handfuls of spinach, chopped
-2 1/2 cups of cherry tomatoes, cut in half
-8-10 basil leaves, chopped
-4 Aidells pre-cooked chicken and apple sausage links (found at Costco), sliced into circles
-olive oil
-seasonings to taste (garlic, pepper)

Directions:
-Preheat oven to 350 degrees
-Chop cherry tomatoes, spinach, basil leaves, and sausage
-Cook sausage on skillet until browned, then add tomatoes, spinach, and basil
-Crack 12 eggs into bowl, whisk with seasonings
-Grease 9 x13 pan with olive oil to prevent sticking
-Add sausage and veggies and spread evenly, then add egg mixture
-Bake for 30 minutes (or until center is cooked) and enjoy!

SEARED LEMON SCALLOPS AND ASPARAGUS

Servings: 2

Ingredients:
-10 scallops (thawed and blotted dry if purchased frozen)
-2 lemon
-cracked pepper
-garlic powder
-everyday seasoning from Trader Joe's
-bushel of asparagus
-olive oil
-crushed red pepper

Directions:
-Preheat oven to 400 degrees
-When ready, add asparagus to pan and drizzle with olive oil, crushed red pepper, and everyday seasoning and cook for 15 minutes, or until crispy
-Heat skillet on medium
-When skillet is hot, add scallops and top with cracked pepper, everyday seasoning, garlic, lemon juice, and lemon zest (zest is key-- don't leave this out!)
-After searing one side for 3-4 minutes, flip scallop and sear for additional 3 minutes
-Place scallops and asparagus on plate and add additional lemon juice and lemon zest and enjoy!



CHICKEN AND VEGGIE STIR FRY

Servings: 5 - great for a make-ahead lunch!

Ingredients:
-1 lb of thin cut chicken breast
-1 bag of fresh riced cauliflower from Trader Joe's
-2 cups of sliced mushrooms
-1 sliced red pepper
-1 sliced onion
-1 small bag of snow peas (this is an approved legume)
-olive oil
-2 tablespoons of coconut aminos (or enough to lightly coat cauliflower, veggies, and chicken)- this has a similar taste to soy sauce
-everyday seasoning from Trader Joe's to taste
-garlic to taste
-any other veggies you enjoy in stir fry!

Directions:
1. Heat skillet to medium and add riced cauliflower, seasonings, and coconut aminos. Cook for 5 minutes and set aside.
2. Dice chicken and veggies
3. Add chicken, veggies, olive oil, coconut aminos, garlic, and everyday seasoning to skillet and cook until done
4. Combine riced cauliflower, chicken, and veggies and enjoy! (Add additional coconut aminos if desired)


APPLE, PUMPKIN, AND CINNAMON BREAKFAST BAKE

GRILLED FILET MIGNON WITH BRUSSEL SPROUTS AND ROSEMARY AND HERB POTATOES

Servings: 2

Ingredients:
-2 fresh filet mignons (great options at Trader Joe's)
-3 cups of sliced red potatoes
-everyday seasoning
-garlic salt
-rainbow peppercorns
-Herbs de Provence from Trader Joes (thyme, marjoram, savory, rosemary, basil, sage, lavender blend)
-sliced brussel sprouts
-olive oil
-dash of coconut aminos

Directions:
1. Preheat oven or toaster oven to 400 degrees
2. Marinate filets with everyday seasoning, garlic, rainbow peppercorns, and a dash of coconut aminos and let sit for 1+ hours
3. Slice potatoes and toss with olive oil and herbs de provence
4. Slice brussel sprout and toss with olive oil, garlic, and everyday seasoning
5. Heat grill and cook steaks to desired temperature
6. Place brussel sprouts in grill basket and cook for approximately 10-15 minutes (or until desired crispiness)
7. While steaks and brussel sprouts are cooking, place potatoes in oven and roast for about 20 minutes or until browned
8. Serve steaks, brussel sprouts, and potatoes together and enjoy!

SIMPLE INGREDIENT CLEANING + PERSONAL CARE PRODUCTS


Hi friends! It has been far too long since my last post, (an entire year?!) but I am back online to share with you some of my favorite simple, clean ingredient products for cleaning and personal care. One of my new years resolutions this year was to switch over as many products as I could to natural, non-toxic alternatives that were both still effective and wouldn't break the bank. I started the process last year, but I still had several items that needed to be converted over. I've made some good headway, and I'm excited to quickly talk about each of these products and hear feedback on successful products you have found too!


1.HAIR/FACE/BODY WASH


This category of products was the first that I switched over, and I did this about 6 months ago. I starting using the Honest Shampoo + Body Wash (sweet orange vanilla scent), and I love it. The main reason I chose this product is because it does not contain Sodium Lauryl Sulfate (SLS), which is an ingredient that makes soap have its "lather", but it has been linked to skin irritation, cancer, and other toxic effects. Overall, the list of ingredients is very natural and non-toxic. Even better, I found a 2 pack of a 17oz bottle at Costco for $12. Normally, the 10oz product is $7 if you do the honest company monthly bundle (any 5 products for $7), or $10 at Target. I also use the Honest Company Conditioner, which you can find through the Honest Company website or at Target.

Another body wash I found that was free of parabens/SLS is Burt's Bees Peppermint and Rosemary Body Wash. It smells amazing, and has a good ingredient list. It is around $7 at Target.

Instead of using shaving gel/cream, I use coconut oil, which is an effective natural replacement. I bought the organic cold pressed and unrefined coconut oil from Trader Joe's, but I think any pure coconut oil will do the trick. Coconut oil comes in a solid form and it turns to liquid with heat, so if you store it in your shower it will turn to liquid and be easily usable. A 16oz jar is $5.99 at Trader Joe's.

For Face Wash, I just started using the Trader Joe's Spa Face Wash with Tea Tree Oil. It has a clean ingredient list, and it has Melaleuca (Tea Tree Oil) as one of its top ingredients, which has antimicrobial properties and is a natural way to help skin stay clear. It is around $6. I also use a drop of Doterra's Melaleuca oil on my face at night.

2. MOISTURIZER


For daily moisturizer, The Honest Company makes a fragrance free Face + Body Lotion that does the trick and is non greasy. I also use their Organic Healing Balm during the winter if the regular lotion isn't enough (be warned, this one does have a greasy feel, but it works wonders!) Each are $7 with the Honest Company bundle (5 items for $7 each).

3. DEODORANT


One of the main ingredients in non-natural deodorant is aluminum, which has been linked in several recent studies to cause changes in the estrogen receptors and potentially cause cancer. There are tons of natural deodorants on the market (with very mixed reviews), but a friend recommended one from Schmidt's Naturals that works just as well as the aluminum alternative. I use the Charcoal + Magnesium deodorant, and would highly recommend. It is $10 on Amazon.

4. TOOTHPASTE


Doterra makes a natural whitening toothpaste as part of their OnGuard line, which is an oil blend that promotes immune support. This is SLS and fluoride free. However, it does have a cinnamon taste (which I like, but not everyone is a cinnamon fan), so if you prefer a minty option Schmidt's Naturals and Tom's both make a natural toothpaste option (though I haven't tried).

5. CLEANING PRODUCTS/LAUNDRY


For an everyday surface cleaner, I use the Honest Multi-Surface Grapefruit Grove Spray, which is SLS/Ammonia/Bleach free. It is a plant-based cleaner, and I've found it to be very effective (and it doesn't have a harsh chemical smell).

I also love the Honest Company Laundry Detergent. I buy the unscented version and add about 8 drops of Doterra Lavender oil to the full bottle. It very effectively cleans our clothes, and it is only $7 if you are subscribed to the Honest Company bundle (5 items for $7 each). Instead of using dryer sheets, I switched to using wool balls and adding a few drops of lavender oil to each. Wool balls are super effective in removing static and helping clothes dry faster in the dryer, and you can using them for months without replacing. You can get a 6 pack of them on Amazon for about $10.

Lastly, Therapy makes a stainless steel cleaner + polish that is natural and the most effective stainless steel cleaner I've ever used! One of my biggest pet peeves is to have fingerprint marks/water marks on our appliances, and this spray is made up of plant-based ingredients and does wonders. My husband found it on Amazon as a Black Friday Lightning Deal, but it is now $15 for a 16oz bottle with microfiber cloth.

It can be overwhelming to start the process of switching to non-toxic products, but it is a worthwhile investment. Hopefully these reviews will help you if you are looking to switch any/all of your products to a more natural option. See links below to the products!
